Description
Tender potato rounds are roasted until crisp and caramelized, then tossed with garlic, Parmesan, and herbs for a rich and flavorful bite. They are easy to make, beautifully golden, and pair well with almost any main dish.
Ingredients
- 1 ½ pounds baby potatoes or Yukon Gold potatoes
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- ½ cup grated Parmesan cheese
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- ½ teaspoon paprika
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat the oven
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it. - Prepare the potatoes
Wash and dry the potatoes well. Slice them into thick rounds, about ½ inch thick. - Season the potatoes
In a large bowl, toss the potato slices with olive oil, minced garlic, Parmesan cheese, thyme, oregano, paprika, salt, and black pepper until evenly coated. - Arrange on baking sheet
Place the potato slices in a single layer on the prepared baking sheet, making sure they are not overlapping. - Roast
Roast for 30–35 minutes, flipping halfway through, until the potatoes are golden brown and crispy on both sides. - Garnish and serve
Remove from the oven and sprinkle with fresh parsley. Serve warm.
Tips
- Dry the potatoes well before seasoning to help them crisp up.
- Do not overcrowd the pan or the potatoes will steam instead of roast.
- For extra crispiness, use freshly grated Parmesan.
- Flip carefully halfway through roasting for even browning.
Variations
- Add chili flakes for a spicy kick.
- Use rosemary instead of thyme for a stronger herb flavor.
- Swap Parmesan for Pecorino Romano for a sharper taste.
- Add a little melted butter after roasting for richer flavor.
Correction
For best texture, slice the potatoes evenly so they cook at the same rate. If cut too thin, they may burn before becoming tender inside.
Enjoy
Serve these crispy garlic Parmesan roasted potatoes with grilled chicken, steak, fish, or enjoy them on their own with your favorite dipping sauce.
